Myself, I've never been too fussy about the Eevee family, but if I had to choose a favourite, it would be Espeon.

Glaceon heart I don't use Eeveelutions very often but when I needed an ice type Glaceon saved me there.

hhmmm there is no pokemon in the eevee line i do not like and or cannot work well with my dream team would be a full set of eeveelutions and i would switch them up as needed
