"Bruce Bogtrotter's Chocolate Cake"

Equipment
20cm cake tin
greaseproof paper
pyrex bowl
large mixing bowl
saucepan
Skewer
wire rake
palette knife

Ingredients for cake
225g (8oz) plain chocolate
175g (6oz) unsalted butter
225g (8oz) caster sugar
60g (4tbsp) plain flour
6 seperated eggs

Ingredients for icing
225g (8oz) plain chocolate
225g (8oz) double cream

one. Preheat oven to 180 degrees C/350 degrees F/gas mark 4.

two. Grease and line the cake tin with greaseproof paper.

three. Melt the chocolate in the pyrex bowl; either over a pan of hot water of on a low setting int he microwave.

four. Mix in the butter and stir until melted.

five. Mix the choclate and butter, flour, sugar and lightly beaten egg yolks in a large mixing bowl.

six. Beat egg whites until stiff.

seven. Fold the egg white into the rest of the mixture.

eight. Cook for approx. 35 minutes. There should be a thin crust on the top but wen you put a skewer into the middle it should come out with some mix on it. This may seem like it's not cooked but it gets firmer as it cools.

nine. Leave the cake in the tin on a wire rack to cool.

ten. When cool enough to handle remove from the cake tin and discard the greaseproof paper.

eleven. Melt together the chocolate and cream for the icing.

twelve. Allow this mixture to cool slightly.

thirteen. Turn the cake over so you have a flat top for icing.

fourteen. Carefully spread the icing over the whole of the cake, including the sides.

fifteen. Allow the icing to set completely in a cool place before serving.
