I actually played Spyro and Crash Bandicoot pretty recently and they were ridiculously easy.

I liked this one where you're like in a mall etc. shooting people, nice effects and feel.

One of my favorites is Thousand Arms. Sometimes I find myself thinking about it when my brain is idling. But really, there are too many good games for the system to narrow it down to one game.
