When you exercise, find something that automatically keeps track of how much you burned instead of trying to figure it out. I use Wii Fit, so when I exercise everything is recorded and kept track of.
Have a note pad set aside just for keep track of what you eat. Write them down while your eating or right after so you don't forget. Make sure to write down how many servings you had so you can go back and add up everything.
Start getting into a routine! Since I don't work and I stay at home all day, my daily routine is like so. I wake up, use the restroom, feed my pets, check my messages, do a morning exercise routine, have breakfast, relax while my stomach settles, work out until I meet my goal, have lunch, clean the house, have a snack, spend time with my boyfriend, have dinner, rest for the evening, go to bed, rinse and repeat.
So, if you have work or school, find a way to incorporate your goals wherever you can.
