http://www.japan-guide.com/e/e2063.html matsuri are held often by/for local shrines, so it's not a stretch to say the boss might be a deity, if they do it.
Since the whole thing has been to figure out which of the two will be the "spirit of summer" it'd make sense to either have the spirit that won go power-crazy and have to be fought... or the deity that lost be a sore loser and have to be fought to take him out of his tantrum.
Though unlikely, they could introduce a new character at this point. If they did that, I wouldn't be surprised if they had the moon-bunny as the boss. Kaguya tends to be associated with Matsuri a lot.

Yes, but gaia doesn't care much about what users want. And it would mean they'd have less art/work to do if they reused the current NPCs.
If it turned out to be Amaterasu.. I probably wouldn't bother trying. I'd expect it to be impossible. And after playing Okami I don't wanna hurt Ammy.

Not really - it'd be likely they'd have to redraw things like one of them now flipping out for whatever reason and stuff like that.

Before the event, I was mostly in zOMG [iirc]. x'Da
