It seems that each item donated gets you 1 gingerbread.
I started the event early & this was not the case.
my stats as of now:
SpaceAce23
Holiday Hero
Items Donated: 37
Gingerbread Earned: 22
Gold Donated: 0
is there a fix in the works???

side note:you can run missions at 2 secs. left & they mostly go thru ...so ya can cut a little time off your wait. twisted
