I find the fossa to be fascinating, but underused in fiction. It's the largest native predatorial mammal in Madagascar, for one.

Ocelots, mockingbirds, fennec foxes, dholes, gazelles, otters, sea lions, thylacines, okapi, ostriches. And if you're willing to use a few mythological animals: dragons. Or wyverns, if you want variety.
