I have all three soundtracks fro FLCL and the Complete Best soundtrack for Fullmetal Alchemist and I enjoy all four of those CDs. As for my favorites overall:

Good choices. I would also say the entire FLCL soundtrack by The Pillows, and all of the songs from Bleach that are by Orange Range. Also, I almost forgot "Tank!" (the opening theme song from Cowboy Bebop).

Death Note for the TV series is quite awesome.
Full Metal Alchemist soundtracks are also quite good, too.
