Death Note for the TV series is quite awesome.
Full Metal Alchemist soundtracks are also quite good, too.

I totally agree...my favorite is by Maximum the Hormone, called "Zetzubou Birri". Then again "the WORLD" is pretty good to.

I also like the songs in InuYasha like the ending theme "Every Heart" by Minna no Kimochi.

I like L and Light's Themes for Death Note. I also have the Noir soundtrack which is pretty good. I like Canta Per Me. I also like the ending songs for Inu Yasha, though the series annoys me to no end. I would have to say my favorite themes are from Outlaw Star, which is my second favorite anime next to Cowboy Bebop. The Opening and Ending themes for that series are amazing. I also enjoy listening to the OP for Gunslinger Girl.

Is he always this funny, or just on days when he's wanted for murder?

The soundtracks from all the Miyazaki films.

As a fan of (some) anime, I have encountered soundtracks I both like and dislike.

Honestly, like anime itself, the majority of music in anime is pretty ******** terrible. Most anime have shitty looping electronic tracks, generic synthesized sweeping-violin pieces, and some hipster "look, I'm just like Cowboy Bebop" jazz tracks. Even worse are the series which rely on "J-pop" for their base influence musically.

This isn't to say all anime have bad soundtracks. Though, generally, good soundtracks come with good anime. Boogiepop Phantom has an awesome scuzzy, noise-based OST. Famously, Cowboy Bebop has some pretty amazing jazz. Witch Hunter Robin had some truly great orchestral pieces, each song of which had an intense and distinct flavor. So on an so forth.

yeah i agree that most cool anime soundtracks and songs mostly comes from wonderful anime!
but sometimes the anime becomes wonderful because of its music!
princess momononoke soundtrack was so cool
I love shoujo kakumei utena's ost. It's so sweet and classical, gives me a lot of peace.
And the duel songs are really cool ^^ I love them all.

Iceman is indeed a good/fun band
I like the opening to the anime Gantz. Such a catchy tune cool

And I agree, "Lilium" is a hauntingly beautiful song. Too bad the ending theme for that show sucked so badly.

If you enjoyed Lilium, check out the Cossette Theme from "Le Portrait du Petit Cossette"-

The opening always gives me chills.
The music to Escaflowne the movie and Outlaw Star were outstanding. I can't stand the Cowboy Bebop music.
Speaking orchestra-wise (like the background music in anime), Death Note and FullMetal Alchemist pretty much take the cake. As in OPs and EDs... Wow, that's a hard one. I don't really find my J-Pop/Rock that way, though I do like Do As Infinity quite a bit, and their music has appeared on InuYasha several times domokun

I'm just not a jazz guy and I can't stand saxaphones. I think one may have harmed me in a previous life.
