If I buy Gaia Cash, will it automatically be converted to Moga Cash when I play Monster Galaxy?

No, you have to convert it, and its better to just buy Moga cash, because the conversion from GC to MG is not 1:1.
Open the game in Gaia, and click on "add moga cash". It will take you to the cash screen with conversions.

If you are just raising money with ads and stuff then you'd only be able to convert.

Gaia is limited because of how facebook works.
