Gimli: [upon leaving Lorien and Galadriel] I have been dealt a wound beyond all healing, for I have looked the last... upon that which was fairest.
[sighs]
Gimli: Henceforth I will call nothing fair unless it be her gift to me.
Legolas: What was it?
Gimli: I asked for one hair from her golden head... she gave me three.

Gimli: Never thought I'd die fighting side by side with an Elf.
Legolas: What about side by side with a friend?
Gimli: Aye. I could do that.

[in a drinking game]
Gimli: It's the Dwarves that go swimming with little, hairy woman.
[he burps]
Legolas: I feel something. A slight tingle in my fingers. I think it's affecting me.
Gimli: What did I say? He can't hold his liquor.
[Gimli passes out]
Legolas: [to Eomer who is watching] Game over.

Gawker

"Rohan? What is the house of Rohan, but a thatched barn where brigands drink in the reek, and let their brats roll on the floor with the dogs. The victory at Helms Deep does not belong to you Theoden, Horse Master. You are a lesser son of greater sires." Saruman, The Return of the King Extended

or

"Oh, but you are alone. Who knows what you have spoken to the darkness, in the bitter watches of the night, when all your life seems to shrink, the walls of your bower closing in around you. A hushed, tremulsome, wild thing. So fair... and so cold. Like a morning with pale spring, still clinging to winter's chill." Grima Wormtounge, The Two Towers

or

Theoden: "Who am I, Gamling?"
Gamling: "You are our King, Sire."
Theoden: "And do you trust your King?"
Gamling: "...Your men, my Lord, will follow you to whatever end."
Theoden: "To whatever end...
'Where now are the horse and the rider? Where is the horn that was blowing?
Where is the helm and the hauberk, and the bright hair flowing?
[...]
They have passed like rain on the mountain, like a wind in the meadow;
The days have gone down in the West behind the hills into shadow.'
How did it come to this?" The Two Towers

My favorite song is mentioned in full in the Fellowship novel. It is sung by Frodo as he, Pippin, Merry, and Sam are heading out for the first time and Frodo recounts a song Bilbo taught him about adventuring:

The Road goes ever on and on
Down from the door where it began.
Now far ahead the Road has gone
And I must follow, if I can,
Pursuing it with eager feet,
Until it joins some larger way
Where many paths and errands meet,
And whither then? I cannot say.

I really love 'Edge of Night' in Return of the King. It makes the scenes that go along with it seem very surreal (not to mention Billy Boyd has a lovely voice).

(if you're wondering, I mean this song---> [link]

Frodo: Forget it Sam, I'm going to Mordor alone.
Sam: Of course you are.. and I'm coming with you!
im looking for it now
“Many that live deserve death. And some that die deserve life. Can you give it to them? Then do not be too eager to deal out death in judgment. For even the very wise cannot see all ends.”
"There is some good in this world Mr. Frodo. And it's worth fighting for." -Sam

"Come my friends. The ents are going to war, it is likely that we go to our doom. Last march of the ents." - Treebeard

Pretty much these are up in my list!!
The green dragon would definitely be a favorite, but I'm at a tie here, the song Aragorn sang at the end of the return of the king was beautiful.

It acted like a lullaby to me with his voice.

my favorite song from the Lord of the Rings trilogy is the one pippin sings for the king in Return of the King

"Home is behind, the world ahead, and there are many paths to tread. Through shadow, to the edge of night, until the stars are all alight. mist and shadow, cloud and shade. All shall fade. All shall fade"

This was my favorite song too. But my favorite movie was The Two Towers because it was so dark and gritty, all hope seemed to fade. Then Gandalf shows up at the end in all that sunlight and that song playing. Wheres Gandalf when you need him in real life?
Good movie.
