So I recently became a vegetarian.

My reasons are just because I want to eat healthy. -shrugs-

But I'm having difficulty finding meals to make that look and are actually tasty.

Ideas?

Well, it doesn't LOOK so good, but refried beans taste great, in my opinion.

Serve with Tortilla bread and home made guacamole, and it's quite nice.

1 can kidney beans
1 small tomato or one tablespoon tomato paste/sauce
1 small onion (or to taste), finely chopped
1 or 2 cloves of garlic (to taste) finely chopped
2 tablespoons oil of choice
(I also use Cayenne powder and chop up a spicy pepper in mine, but I'm a spice fiend.)

Heat oil in a frying pan, toss in garlic and onions, cook until translucent, add tomato in whatever form, and beans. If you use paste, thin it out with water before you mix it in. (Mix in spice at this point if you use it.) Cook for four or five minutes, then either using a food processor or a fork, smash all the beans around, salt to taste and serve.

Guacamole, the recipe I use, anyway, is just 1 avocado, smashed, with one small onion, very finely cut, and a few tablespoons of lime. (To keep fresh, keep the pit of the avocado in with whatever you don't eat right off.
