Vegan is pretty much all or nothing. You either don't eat anything that comes from animals or you just have a regular diet like everyone else with fruits and veggies and animal products...

Sesame Cheese
1 cup raw tahini (sesame seed butter)
1/4 to 1/3 cup fresh lemon juice
3 to 5 cloves garlic, smooshed or finely chopped
Salt to taste

Mix all together with a fork until tahini stiffens. It's best if allowed to sit covered in your frig for about 3 days, but can be used right away. Can be used for a vegan mac and cheese, or on steamed vegetables. With either smooshed garbanzo beans or grilled eggplant, then some olive oil and seasonings like cilantro and/or coriander (same plant), you have hummus or baba ganoosh...
