Until you can get comfortable saying it out loud, go for simple actions. Afterall, they speak louder than words, don't they? XD

Seriously, though, pull him in for a hug when you greet one another or reach for his hand to hold it for awhile. It's little things like these that show you do appreciate them and are willing to put forth effort without necessarily having to flat out say it.
