You can make mini zucchini pizzas by slicing them into small circles then adding pizza sauce, cheese and toppings (green/red/yellow peppers, onions). Put a little olive oil on a pan and put them on broil in the oven until the cheese melts. Also, use basil and oregano to make it taste like pizza. The zucchini doesn't really have a lot of taste so it acts like a good bread substitute. I've tried it and it's pretty good. whee

You know what, if you like tamale pie you can make vegetarian tamales with a zucchini based filling -- they are fantastic.

Those zucchini pancakes are also delicious, and I cook zucchini slices in a simple tomato sauce for a side dish.

Huh, I guess I overlooked that. My apologies, I think I might have given you the recipe the wrong kind of pancit sweatdrop
I asked my mother, and she said that it's so-tang-hon pancit. I was looking at a blog, and one lady
said that the ingredients may differ by regions in the Philippines.

What CAN'T you do with zucchini? Zucchini bread, baked zucchini, stuffed zucchini, zucchini pasta, zucchini egg casserole, fried zucchini chips, if you can dream it you can do it with zucchini.
In total agreeance! Now if only they came in year long seasons.

Chop it in half inch peices and fry it with garlic salt and pepper. You can try using ranch as a dipping sauce, actually works well.

Zucchini Fries are the best things ever. You don't even have to fry them, you can bake them but I suggest battering them in panko first. Seriously, they taste waaay better than regular potato french fries.
