I made an attempt at a red wine vinaigrette, and while it's not terrible, it's not that great, either. I guess maybe I should have tried white wine vinegar, for a lighter flavor.

It's just really tart. And I don't want to keep adding sugar, since the idea is to make a healthy dressing.

Anyone have a good recipe?
(Or a good hint on how to doctor mine up?)
I'm going for Italian restaurant appetizer salad type dressing.

My standard guideline is "two parts vinegar (or lemon juice) with three parts oil" as base. Other than that I'd recommend to just try out different kinds of vinegar and oil. Add some spices, maybe a little mustard (which serves as spice and "emulsifying agent" at the same time). Trial and error... sounds silly, but this way you'll actually learn how to cook and develop a feeling for the right amounts.
Hope this helps even though it's not a real recipe.
