Have you ever heard of Tempeh? Tempeh's a meat substitute that is made of lots of different nuts and grains, and is completely vegan. It's cheap, easy to get (I get mine at King Soopers), and there are lots of things to do with it. The first time I had it, it was a meat substitute in a taco, and it was incredible. There are a bunch of different flavors, and they also have recipes on the back of the box, but my favorite thing to do with it is as follows:
You need:
Tempeh (duh)
Pita bread (or some sort of edible pocket food to put this all in, as I realize Pita isn't usually vegan)
balsamic vinegar
baby carrots
favorite salad greens
soy sauce
honey/hoisen sauce (or both)
Directions:
1. cut off a chunk of the Tempeh, however big you want, then cut this into thing slices (actually doesn't matter how you cut it, that's just how I like it)
2. mix together your soy sauce and honey/hoisen, and then add in the tempeh slices, making sure to get all sides of the tempeh covered. Let sit for 5-10 minutes
3. take a slice of pita (if using) and cut it in half. if using something else, just make sure it's big enough to fit all of this into it
4. chop up a few baby carrots, maybe 7 or 8 of them, to whatever consistency you like and set aside
5. in a pan over medium heat, saute your tempeh in the marinade
6. take your pita/pocket, and in the bottom stuff in some salad greens. Put tempeh on top, sprinkle your carrots over that, put a drizzle of balsamic over that, and Viola! you're done!
It's sooo yummy. I'm not vegan, but I love tempeh and I eat it almost every day. It's really tasty, is high in protein, and is great if you want to eat something light. Enjoi!
