I have learned a good breakfast recipe (not breakfast exclusive though). If you are busying in the mornings you may want to make them ahead.

This is a recipe to make Hot Pocket styled snacks but you control their contents. Can make as few or as many as you and keep them in your freezer to heat up or make them as you want them fresh.

RECIPE (very simple too):
Eggs (around 6 eggs will make 4 or so wraps)
Onion/Garlic
Cheese (your favorite type, do not need if lactose intolerant)
Meat of choice (I usually cut up bacon or Taylor ham)
Peppers (optional as well)
Flour Tortillas (the soft taco shells)
Vegetable Oil (or other oil of choice)
Saute Pan or Skillet
Frying pan


1. Cook up your onions/garlic, peppers, and meat to a nice browned finish in frying pan

2. Add eggs to the onions/garlic in the pan and cook until the eggs are fully cooked. Whip them around so all the ingredients get squished together like scrambled eggs. Do not cook them like an omelette.

3. Take finish mixture off the heat and put Vegetable oil in the skillet/saute pan and get it heated up

4.Take the egg mixture and serve it out evenly onto the soft tortillas.

5. Sprinkle as much or as little of the cheese you want on each egg mixture in the tortilla and then fold the tortilla into a little box
(fold the bottom up the top down and the sides in. If you put too much mixture in them they will not close and this is not good for the next step because they will make a mess)

6. One at a time (or a bunch at a time if you are a master chef) put the tortillas into the hot oil and essentially deep fry them, just shortly on both sides and then set them on a double layer of paper towel over a paper to drip out the extra oil and to cool a bit.
!! If you do not want to fry them in the oil you can also just brown the tortilla like a panini or grilled cheese by frying it slightly on both sides.


7. Any left over that have not been eaten in the sitting maybe put into freezer storage bags and eaten at a later time by simply removing from the freezer, cutting in half and microwaving for about a minute.

This is my simple solution to the problem of "what the heck did they put in that hot pocket it didn't taste or feel like ham". You can substitute anything you wish to and make them in your own way. You can add veggies like spinach and mushroom in it too or take stuff out. The most important part is to have fun and make lots of yummy wraps. yum_puddi
