First off get stable! If you have an undiagnosed GI issue, I'd definitely recommend going to a registered Dietician. Not a nutritionist, but a registered Dietician. Work with them AND your doctor and try to find a diet that can help. Many GI issues such as Chron's, Colitis, ect can be improved to an extent with diet.
My issue was nowhere near as severe as yours, but my body was not absorbing nutrition in my gut. I dealt with constant cramps, bloating, and terrible stools. It got to the breaking point when I started passing nothing but blood and mucus through my stools.
I was put on an elimination diet, both my dietician and doctor worked together. We found out I am very sensitive to wheat, rye, caffeine, and milk(I'm unable to handle the sugars that occur in dairy, so butter, heavy cream are completely okay for me to eat) but I am not Celiac.
So please, take care of yourself - get the help you need!
