Harry and Hermione is a traditional couple as in the main character will get the main girl character.
Ron and Hermione is another traditional couple as in the love/hate relationship.
Personally, I perfer nither of the two boys to have a romantic relationship with Hermione.
Harry and Hermione relationship as friends is....well...they are close. They are best friends, but in the books there are no sexual tension between the two. The relationship reminds me of Tifa and Cloud (without the sexual tension) in some form. When they are alone and talk, it's interesting. Harry can tell stuff to Hermione that he can't tell to anyone else, and it's the vice visa with Ron.
They had their fights now and then even though it is always rare when they fight. Starting with book 3 of Harry Potter, the relationship with Hermione and Harry got stronger. They became closer and it's a more mature friendship than Harry and Ron. Whenever they talk alone, it's a mature and thoughtful conversation. Harry is sometimes annoyed by her constent worry though. As for Ron and Hermione....the only thing that really don't separate them is Harry.
The Ron and Hermione relationship isn't mature as Harry and Hermione, which is partly the reason why I don't like this ship all that much. Ron and Hermione relationship as I said before is a love/hate thing. They are two opposite that likes one another. It's been done before just like the main character gets the main girl.
The bottom line is that Harry and Hermione relationship grow over the course of the years, which make their friendhship strong.
Ron and Hermione have been the same with not so much changes. I thought Harry put a stop to it when Harry got mad at them for arguing again in OotP. It's the thing that Ron and Hermione fights which make them less mature than Harry and Hermione ship. R/HH fight over the little things every single book. HBP was a mixture of the ending of the meanless fights between R/HH but also where R/HH got into their biggest fight so far in the series.
But anyway, the way it looks like R/HH will get together than H/HH. I don't want the trio to become a one sided romance though. I rather all three just stay friends.
