I would teach them all rolled into one class. It would be awesome beyond awesome except for the fact that all the requisitioned magical creatures would never make it back in one piece.

I can't see you being tied down to a classroom. Herbology, perhaps? Or History of Magic with a heavy emphasis on field trips.

Maybe history of magic with field trips to see what kind of plants they eat?
