Woot, Ambassador class! I love those ships - way too under-rated in my opinion. Damn that stagehand . . .
As for suggestions for possible future consideration, Steamrunner, New Orleans (though we barely saw it), Centaur, Bradbury/Elkins/Yeager and Olympic classes come to mind.
     
Those ships shown are much too like battlestar galactica design. like the two techs had been fused.
 
     
 
I love the Ambassador, but I have no idea where it would go.

Its supposed to be above the Excelsior, but the Excelsior is arguably more advanced as far as upgrades etc. Maybe I'll give it out as a special ship or something.
     
Well, I always imagined that there was some kind of major flaw in the Ambassador that meant it got phased out of service way before its time (a.k.a. in-universe explanation for losing the model). If you wanted to bring it in, why not stick it in place of the Saber or Connie and say that the fault has been corrected at a cost to tactical systems or some such? Or you could make it an alternate choice as opposed to the Connie . . .
Or, as you said, you could make it a gift ship.
EDIT: Did some hunting around for specs - apparently, accepted length is 526m, (conjectured) maximum cruising speed of warp 8, (conjectured) emergency of warp 9.4 . . . and there are some differing opinions on armament;
10 phaser banks, two torpedo tubes - Memory Alpha

Well Personally I think there should be one more ship for the Rommies and the Klingons. The feds have 11 and the other two have 10.
     
As compensation, their fleet cap is one more than Feds. Seems pretty balanced to me.
 
     
 
A Steamrunner would be kewl. I'd buy a pair of those if they were done right.

They're supposed to be torpedo boats - I kinda guessed. I'd like one as well; the design is fantastic.

Well, there is the fan-made Kerchan. It'd fit between the D'Deridex and the Norexan.
     
I like idea of a klingon style ship similar to Akira class of federation.
or one that is designed as a multigun warship with weapons and arcs that compensates for faster and smaller ships.
