Mass Effect was extremely underwhelming imo. Granted I'm looking forward to Mass Effect 2, hopefully it's done much much better, but the first was by far the worst Bioware game imo. Sooooo many repeated textures, the planet exploration just seemed like a really bad way to make the game longer than 15 hours, you spend half the game driving around if you want to find everything, and it was just way way way too easy. The shooting controls were decent sure, but... there was almost no character customization when compared to their previoius titles like Jade Empire and KOTOR. They tried way too hard to appease the FPS fans that they kind of killed the game for RPG fans imo. It's half of what it could have been. It just really really started to feel repetitive after a few hours. Maybe it's just me... I really expected a lot more from Bioware though.

I'd rather trade a whole lot of customization and real time combat for not a lot of customization and real time combat.

That's like complaining about how collecting coins in mario sucks.
Who cares? That's not the point of the game.
Exploring side planets wouldn't be so boring if the textures didn't repeat all day long. There's very very little to actually find on the side planets, but the land area is pretty large. It just seems like a tedious task instead of a fun part of the game. Also, yes I would much rather the game be like Fallout 3. Fallout 3, in my opinion, was much much better than Mass Effect. I really didn't like the game that much, get over it. Not everyone will agree with you. It doesn't mean you have to act like a four year old and cuss someone out because you're fragile little ego got shattered. The game was much less in depth than their prequels. Jade Empire is still one of my favorite games by Bioware. It was done very very well, had a rich and diverse world and the story was awesome. Mass Effect seems like way too much was added in after the fact. Mass Effect is supposed to be an RPG first, shooter second, not the other way around. I do like the new game+ mode, because honestly I think all games should have one, but the game wasn't fun enough for me to want to play it a second time. I like RPGs, I can't stand FPS. You like FPS a lot more obviously. Which is fine. Bioware needs to market Mass Effect as a FPS with some RPG qualities, not a RPG with some FPS qualities. It's simply not true.
