As for a generational-type RPG, it's an old one, but a good one. Phantasy Star 3.

Ah, that's easy! it has leveling up! There's also items that you can use to increase your health, as well defense (new armor) and attack (new weapons) I think there might be a few items that increase those things as well

Exactly, leveling up. That's what defines an RPG.

Zelda doesn't have new and more powerful armor and weapons? That's news to me. Also, Zelda has Heart Pieces which increase your Health, so that one doesn't work as well.
