No, they take a bit of time to do, because you have to click the "No Thanks/Pass" button on a lot of stupid offers.
But the ones I have done grant within ten minutes.
Even the ones that don't, if you take a screenshot of the results page and also the confirmation email they send you and file a report, you usually get it within a few hours or up to a day.

They require you to enter your full name, address, and I'm pretty sure your cell phone number too.

They do, but you don't have to use the right information, I don't.
As long as you have a valid e-mail address in there (hopefully one dedicated to spam, since you will get a lot of it) then you're good.

You don't have to use the email you signed up to Gaia with, but for most (maybe all) of the survey offers, you have to use an actual email address.
They usually send you some sort of spam email when you finish the survey and that's how you get the credit for completing it and the gcash to go with it.
So if they can't verify that the email was received, you won't get credited for actually completing it.
The best thing you can do is make a quick email on gmail or yahoo or something and just dedicate that for spam.
It works wonders.
All I do is go in once a week and delete everything in my inbox and junk/spam folder.
