It genrally does hav cinnamon, but I can make you some without?
Here's my base recipe.
Jeannette's chai masala
Makes 1 gallon of chai latte.
Black pepper, whole .25 tsp
Ginger, ground .25 tsp
Cloves, ground .25 tsp
Nutmeg, ground .25 tsp
Allspice, ground .5 tsp
Mace, ground .5 tsp
Orange zest .5 tsp
Galangal 1 tsp
Cinnamon, ground 1 tsp
Cardamon seed 1 Tbl
Jasmine Green Tea 3 HEAPING Tbls
Honey 1.25 Cup, or to taste
Amaretto diSaronno 3 Tbls
Vanilla extract 1 tsp
Powder ingredients up to Green Tea. Put in hops boiling bag, available at any brew store, along with the tea. Boil in half-gallon plus 2 cups of water for 30 minutes. Remove bag.
Heat honey in microwave to make it easy to pour. Pour honey, vanilla and Amaretto in gallon milk jug. Use hot tea to rinse out honey measuring cup. Add tea to jug, cap and shake to dissolve honey. Fill jug with milk, soy milk, almond milk, or other milk substitute to 1 gallon. Refrigerate.
To serve, pour into coffee mug and microwave on High until hot, or pour over ice for iced chai.
Notes: Galangal is a Thai spice, and can be hard to find. If you can't get it, substitute 1/4 tsp more ground ginger. To be authentic, use black tea not jasmine green tea. Black tea has more caffeine, but green tea is healthier. When dissolving the honey, use only a SMALL amount of the near-boiling tea, and uncap the jug often to prevent explosion. The left-over spices make a nice scented potpourri. If you can't get a hops boiling bag, use two clean nylon kneehi stockings, one inside the other. They're cheap and disposable.
