Rose Daughter - Robin McKinley.
Retelling of Beauty and the Beast, and my absolute favorite book. I've heard her novel, Beauty, is also pretty good, but I haven't been able to get my hands on it yet.
Also by Robin McKinley, Spindle's End. It's a retelling of Sleeping Beauty.
She's written quite a few very good books. I'd recommend her to anyone.
I am going to recommend tender morsels by margo lanagan, it's a dark retelling of snow white and rose red.
If you're looking for something a bit lighter I recommend reading sisters red or sweetly by jackson pearce.
I haven't read many good fairy-tale books recently- except Discworld- but I was once madly in love with Donna Jo Napoli's books, Beast and Zel in particular. You might want to give them a look.

I'll definitely take a look. Does anyone have anymore suggestions?? Also forgot to mention I also really liked Ella Enchanted back when it first came out. Wish there were some similar stuff out there at my adult reading level lol.
