A little bit different than recipes, but reading this morning on Swedish Dr. Eenfeldt's sight, it is surprising at how popular low carb eating is in the Scandinavian countries. Some low carb cooking ingredients are in short supply now. More reasons to be jealous of the Swedes, tall, beautiful, eat well, and becoming thinner.

I'd be careful if you're on a low carb diet. It's been said to cause diabetes to some who have ended it and gone back to normal eating habbits.

I'm just telling you that to inform you that it has it's downsides, in case you weren't aware of it. People focus too much on the good things and forget what it can cause if it's taken too far.

Low carb diet makes you feel light and energetic tho. ^-^; But I still prefer some unless I'm on a 2-3 week low carb diet like I am on right now.
I want to try this tonight:

101 Low-Carb Meals
Quote:

Recipe: Roasted Zucchini Paresam

1 – Zucchini
2 tbsp – Parmesan cheese grated
a sprinkle of a spice of your liking
Non-stick cooking spray

1 serving = 1 cup – 4.8 net carbs

Turn your oven to broil. Line a cookie sheet with aluminum foil and then coat with some non-stick cooking spray. Place the zucchini slices out on the pan, then spritz with them with the butter spray or you can drizzle oil over the vegetable. Sprinkle on the parmesan cheese, add the spice of your liking (I used pepper flakes because we love heat in this place) and then pop it in the oven. Broil for a few minutes – until the cheese starts to brown. Enjoy it while it’s warm!


It looks so good, and it looks like it will be really easy to make. Maybe with a chicken dish?
The Roasted Zucchini Parm was amazing. ^.^
We had it with Chicken Parm and NoOdle.
Peanut Butter Protein Balls

1 cup sugar-free peanut butter
1-1/3 cups whey protein powder
1 teaspoon vanilla extract
1-1½ cup sugar equivalent/Artificial sweetener

Preparation:
Put all the ingredients in a mixing bowl and mix all at once. A mixer works great for this, but a food processor would probably be fine as well, or just a spoon. Then roll into balls. If you like, roll in crushed nuts.

Makes approximately 16 balls about one inch in diameter.
Orange Smoothie

Ingredients
1 cup sliced carrots (cooked and drained)
1/2 cup water
1/4 tsp. unsweetened orange Kool-aid mix
1 packet of sweetener (Sucralose recommended)
1 1/2 cups ice cubes

Directions
Put the well cooked carrots, water, Kool-aid and sweetener in the blender. Blend until smooth. Add ice cubes and continue blending until smooth. Serve in chilled glasses.
Additional Information
You can change the amount of sweetener or orange flavor drink mix as you like. I kind of like the carrot note you get from this, but you could disguise it with the flavor mix. Also, I like mine really thick like a sorbet but you could add more water for a thinner shake.

You can add a few tablespoons of cream to yours and it is like an orange julius.

Low-Carb Chocolate Covered Bacon


What you will need:
Bacon
Sugar Free Chocolate Chips

Directions:
Preheat oven to 400 degrees
Cover a large baking pan with foil.
Cut bacon strips in half and lay on the large baking pan.
Bake at 400° for 20-25 minutes or until crisp. Cool completely.

Melt chocolate chips.

Double Broiler:
Melting Chocolate in a double broiler will give you the best results with the least room for error, however, it takes longer and is not always the easiest way.
To melt in a double broiler, place a small amount of water in the bottom pan of a double broiler, the water should not touch the top pot. Place the chocolate or melting chocolate in the top pot and start heating. Stir frequently until chocolate is just melted, turn the heat off and dip away. Place dipped/covered bacon on foil, and allow to coo. Refrigerate.

Microwave:
When melting chocolate or melting chocolate in the microwave, place chocolate in a microwave safe dish (I use a mug). Be careful, the dish will get hot!
If you are using regular chocolate or melting chocolate, set the power to 50% and microwave for 30 seconds at a time.
Stir in between each 30 second interval. This is important! Chocolate can actually retain its shape while being completely melted, so if you go by sight alone, you will overheat your chocolate!
Remove dish from microwave and dip away. Place dipped/covered bacon on foil, and allow to coo. Refrigerate.

I've wanted to do this for a while, but I'm a little wary.. almost everything low-carb seems to have meat. Can this be done safely by a vegetarian?

From everything that I have read, this can be done. And it is fairly popular in England.
Tofu and veggie meats are usually all lowcarb, and is the perfect meat substitute for this kind of diet, in my opinion. I substitute meat out of recipes quite often just to try out new things.

I actually have a couple of articles/websites saved for vegetarian low-carb diets if you are up for reading them.
