I've tried corn and I certainly don't find it gross. Sweet potato doesn't sound bad, either. For the rest, they are more savory than sweet, which might not go well with the expectations of ice cream we're accustomed to.

Oh, haha, that's true. I've seen Iron Chef (original) and one chef made ice cream out of salmon. He even fried the skin to make a little wafer biscuit to accompany the desert.
