Yes, Gast was the head of the Science Department before Hojo, and probably made the initial discovery of Jenova. He left Shinra sometime before Sephiroth's 8th birthday; we can't be sure when, because we don't know exactly how long he was at Icicle Lodge with Ifalna, but it had to be with her at least a year. Bow-chika-bow-bow...
Anyway. I would
love to know more about Gast and Ifalna. I mean, for background characters, they're
really important. I mean, just think about what Sephiroth's life would have been like if Gast hadn't died...think about what Aerith's life would have been like if Gast hadn't died.
Gast was practically like a father figure to Sephiroth and probably hearing the full story of his birth would have changed him.
I wonder how Gast and Ifalna met in the first place. I mean, Ifalna was the last living full-blooded cetra, so wouldn't she have to stay away from Shinra so she wouldn't get experimented on? And yet, she ended up with Gast and gave birth to Aerith.

Considering the age that Sephiroth would have been when Gast was still around, and the way he idolized the man even as a grown adult, Gast would have certainly been a father figure to Sephiroth. Also telling is the fact that the FFVII team has said in official materials that while writing the story, one of the relationships they considered for Aerith and Sephiroth was brother and sister. Traces of this connection still linger in the actual story: Gast was a father figure to Sephiroth in his youth and the 'father' of the Jenova Project (making Sephiroth a metaphorical son), and was the birth father of Aerith herself. (But then again, another connection they considered for Aerith and Sephiroth was being former lovers. They fixed that with Zack, thus connecting her to Cloud instead. Still, Aerith seems to have a thing for SOLDIERs...)
I think that if Gast had been the one to tell Sephiroth about his origins, he wouldn't have lost it. But then again, perhaps if he had been told about his origins by someone other than an insane man at his most emotionally weak moment, he probably wouldn't have lost it anyway.
