I've never played Sakura before seeing as how I only play at the arcade, but I can give you an idea of what Ken wants to do in the match.

His best poke is F+MK. It's a kick that moves him forward and doubles as his kara move. He'll probably play footsies with you until he scores a chance to jump in or knock you down. Once he's in, he's got a scary mix-up because his kara throw has a ton of range. If you get hit by a EX Tatsu, Ken is at advantage by 1 frame so pretty much anything you try to stick out will get counter-hit. You'll want to late-tech. If it's a regular Tatsu, pay attention. The LK and MK versions leave him at significant disadvantage so be sure to punish. The HK version leaves him you at advantage by 1 frame, so anything he sticks out (besides a Shoryuken) will get counter-hit.

Basically, don't let Ken knock you down. Once he's on you he's very hard to get off. But you play Sakura, so same goes for him. Try to establish momentum right from the start.

On an unrelated note, I need to soften my touch. My fingers get tired after a long session because I'm hitting my buttons too hard.

Someone help me. I keep losing to this really good Dhalsim player. I have no idea what to do I can't even get close to him. My main is Rose.

If you continue to play this good Dhalsim player, all I can say is to watch his playing style. One of the best things you can probably do is watch some youtube videos of pro Dhalsim players and watch their style of gameplay. IMO, I think that one of the best things to do is to Focus Attack. If you know he's going to pull out a low double punch, focus attack it, it would leave him vulnerable for attack if your FC hits. But other than that, just keep on playing him until you are fully aware of how he plays.
