It's BioShock, made in 2007 when my computers barely a few months old.

Downloaded the latest graphics card driver, tweaked a few settings, and it played perfectly last night, smooth as silk even on its highest settings.
Today it's stuttering so much it really prevents me from even attacking enemies properly.

What could have changed overnight to have ruined my fun gaming experience >_0

Could be that more is happening on the screen now, and there may also just be more detail in the area's your in.
     
Problem with that is on the Menu screen if my games going to stutter the mouse there stutters too, when it plays smooth the mouse cursor will move smooth.
Plus last night I had a crazy busy battle and it went nicely, today Im struggling on the peewee's just because theyve moved since I cant follow them on screen smoothly.

Roll back the Video driver before the one your using now? Did you try lowering some detail to see if that fixed any of the problems?

Turns out I had to lower my screen resolution, odd isn't it? Just gotten into PC games recently, didn't think having better then the required settings would cause grief XD

yes. lowering your res, will improve ur fps, and get rid of some of the choppyness. Having > than the documented requirements dosn't mean you can max out ur graphics settings, this depends on the graphics card ur running. You don't need recomended/best graphices card it run your games ( though it is advisable of a great gaming/visual experience). But it all about tweaking the game's graphics and finding a reasonable balance between beauty and performance. Welcome to pc gaming cool pc > console mrgreen
     
Yeah, requirements are what the game needs to run (period), recommend requirements are what the game needs to run well (usually at medium settings).
