I have installed a couple of plugins that I really like to use but will they still work if I convert Chrome to 64 bit?

Well as your question currently stands the answer would be "how long is a piece of string?".

If we knew what extensions you were looking at, we could give a better answer.

That would be BetterGaia, LastPass, Avast Online Security and Adblock.
Only LastPass and Avast use anything that might be affected by the browser being 32- or 64-bit.

LastPass, I know for a fact that it's neutral. It will still work just fine.

Avast, I don't know for sure, but I suspect it probably uses architecture-neutral features Chromw provides. So, yes, it will probably work fine.

Or, you know, you could actually try it and see. It's not as if a kitten will die if you do.
