I think printing sites like ka-blam and comixpress have templates for bleed etc. They're generally not letter sized, but those probably give an idea of the amount when also considering the difference in page size.

I go with a .125 bleed when printing posters or fliers or whatever. Not sure how well that works with pages in a book, though.
