any published writers that have created anthologies?

I want to produce a book that will take a large community of people to create but I'm not sure how that works exactly. I want to collect nation wide submissions but am unsure after collecting them which can be published....wither to only use initials/fake names/actual names...... do these people get part of the sales legally or does it go to the person who puts it all together.................I am just unsure about how all these things work >.< I want to create this nation wide collection of real life stories but at the same time I dont want some random person that submitted a piece to sue meor something lol
