The only book that deserves to be remade is Lord of the Rings. Bad enough to be a pain to read, good enough to be worth reading.

Ehh, I quite enjoy reading Tolkien (even at his most
long-winded, shall I say?), but then, I am slightly eccentric. I know plenty of people that get fed up with his rambling.
As for
Dr. Jekyll and Mr. Hyde, yeah. Fairly short story rather than a writing style. What would you want to achieve from rewriting it? Giving it a different atmosphere? From a different perspective? Or do you simply mean that you would like to write a story from the perspective of someone not directly involved in most of the action? That would certainly be an interesting method, although you would have some difficulty in not simply blurring into a sort of third person if you wanted to aim for a longer piece.
