Have you ever heard of Tsuneo Imahora? He did Trigun and some of Gungrave. He is more of an epic jazz, like Tank! by the Seatbelts is, though not all of his songs are jazz, his song Family is very good.
No I haven't, but I did thoroughly enjoy Trigun.
I most definitely know of them! Other than having a anime geek neighbor who loves sharing their pieces with me, my band director at school put Tank and Space Lion into our marching show this year. It was called Jazzimation, we won first place at one of our competitions with it. Here's a link:

Most of their stuff is in the form of blues. At least from what I've heard.

Of course! If I remember correctly, Yoko Kanno composed and directed majority of the songs for Cowboy Bebop and the Seatbelts played it. They were a killer combination. They had a lot of guest artists that sang for them. Yoko Kanno, Maaya Sakamoto, and Origa also put together the song for Ghost in the Shell. Yoko Kanno is the reason I decided to be a music major in University. She is an amazing composer.
My high school jazz band is playing Tank! for our spring concert. I love playing the wailing trumpet parts.
Never hear, but after I heard the rush song, I simply like them.
