I'm seriously not trying to offend, I just would like to know so I can be respectful if I come across this social situation.

refer to them by their displayed gender, is my rule of thumb.

May not be technically correct for some crossdressers but I have yet to receive any complaints as such.

Usually they will be reasonable enough to let you know if it bothers them, though.
