a) Where could we of come from if we didn't evolve
b) How can you explain there not being 'Intermediate Forms' Meaning the inbetween stages that must of existed if Evoloution is true.

a) Where could we of come from if we didn't evolve

A) We DID evolve, so that's a moot point. Other possibilities include being made from pebbles tossed behind the last survivors of an ancient flood, or being made out of water and clay by Prometheus, or coming out of a hole in the ground to find the world above and subsequently stealing food from the Ravens.

I used to believe that Humans evolved from Apes. That all life came from single celled Organisms called Amoebas.

The bible doesn't really go through a step by step on how man was created. That wouldn't have been all that important to the people the Book of Genesis was written for, anyways. The Book of Genesis isn't all that good when it comes to the physical creation of things, but it does an excellent job at what it was intended to do: explain beginning of Man's relationship with God.

in reverse order...
b) Modern species are the "intermediate forms" between past species and future species. it's the faulty assumption that evolution is done which would lead someone to think otherwise. As for the limitations of fossil evidence, the statistical odds against fossil formation are staggering, so there's no inconsistency with not having found certain fossils. Furthermore, vestigal organs (organs which are not currently used in organisms but appear to have been functional in the past) are a sign that creatures have evolved from a stage where they needed that organ to one where it is no longer useful.
