I appologise if it's already been said, but I didn't happen to notice it scanning the page, so:

The Discworld Series by Terry Pratchett. Probably the longest-running fantasy series in the world and people are still hooked on it.
The Night Circus by Erin Morgenstern.
The Edge Chronicles by Paul Stewart and Chris Riddel.

As already recced (twice), the Night Angel trilogy by Brent Weeks

The Study trilogy by Maria V. Snyder is good too if you like the whole assassins, politics and magic thing.

Another trilogy (the best things come in threes) I'd recommend is the City trilogy by Darren Shan. He's more popular for his children's/YA books, but the City trilogy is his first adult trilogy and the mixture of Mayan culture and mythology with magic and gangsters was pretty refreshing.
