because black means something in literature. bluse represents sadness, white represents purity and light. neither of those really fit with a demon butler. in literature black is the color of that which is dark and evil. you don't like it, take it up with feudalistic europe. also, maybe the writer of the manga just likes the color, it's not a crime, ya' know? -_-"
