Probably to symbolize her as being a descendent from a rich family with make up and nice hair.
Also probably for the sake of giving Korra some love interest competition.
Personally I'm kind of surprised she's still around, expected her to be gone with only slight showings every once in a while after Book 1 in a similar sense to the twins in Book 2 not being around except for 1 episode in Book 3.
Edit: Oh... huh apparently in Google, they released an earlier script for the Book 1 ending where Asami would leave with General Iroh, but they changed the story at the end after learning that Book 2 would actually happen through Nick renewing the series.
