I've been thinking this since I first saw the guy. Since everyone else's children and/or grandchildren have some sort of presence in the series, it wouldn't surprise me too much if he were Sokka's kid.

I Have been considering this since the moment i saw Verrick, even in the second season Verrick mentions how he named his boat after his mother saying i quote: "Rest in peace old rocky bottom."
I like to assume this means Verrick is Sokka's and Suki's child. i mean come on!! it has to be true!
