I would kill to see another season of Mononoke. Granted, there were only like 12 episodes of it to begin with. But STILL. Another season would be awesome, however short.
I also wouldn't mind seeing Peacemaker redone. I love it as is, but it would be infinitely better if they adhered a bit more closely to the manga and got rid of Maro and Kichisaburo. Those characters were random and added nothing but stupidity to the otherwise likable story. >_>;;
I'd love to see a Trigun series that follows the manga.

D.Gray-man - either more seasons, or just redo it from the start, since most of the first 50 episodes were just fillers that took the characters way out of character.
7 Seeds - I think it'd be really fascinating to see animated.
Hmm, and maybe something centered around the characters from Noël la neige and Holy Glory by Sichol=bell (essentially, a bishounen Santa with a tragic past and a humanoid bishounen Rudolph who accompanies him).
Ah, and a third season of Darker Than Black would be fabulous!
heart I would like to see Soul Eater redone (its ending was really crap in my opinion), as well as Kekkaishi, Kuroshitsuji, Kaichou wa Maid-sama, and Ouran High School Host Club to be remade and to follow the mangas more closely. I would be so happy if they could do that heart
I would love to see Imadoki and Yotsuba&! in their anime form... Sigh.
As for making a new season, definitely Highschool of the Dead and Deadman Wonderland. Cause I don't wanna have to read the manga. Too lazy.
I think more OVAs for School Days and Angel Beats! would suffice.
I was thinking, even Pokemon. Maybe if they actually decide to end the entire series (which DEFINITELY won't be anytime soon), they should include an extremely dramatic and nostalgic plot involving conflict between all the Legendaries in all regions, and maybe something like... Ash needing to battle in order to save Misty, Brock, May, Max, and Dawn; his old traveling partners.
Of course, that would never happen because Pokemon is (sadly) only going to be directed to the audience with the (estimated) ages of 3-12 ish? :
