I myself am partial to Hellsing. But thyere are a lot of other good anime on these lists, too.

If you want a quick fix (and want to get an idea of what Hellsing, Vampire Hunter D, and Blood: The LAst Vampire look like, go to www.animmusicvideos.org then search for and download a video called "Mitternacht". it is sooooo good . . .

The first things that come to mind Hellsing, and witch hunter robin. Sorry if i'm not much help....heh, im not really into demonic/vampire animes. sweatdrop

Yami no Matsuei is great! It's about Shinigami and has amazing fight scenes. Swords and sorcery, Japanese style. It's called Descendants of Darkness in the US.
