And I guess the change in haircuts and outfits mean that there's some time skip?

Well they're going into the Fire Nation, I'm sure they're not going to walk in there while wearing they're Water Tribe Clothes. And Aang has a giant blue arrow on his head. I think the Fire Nation would see that if they were there.
